Happy Sunday ya’ll! It is a cold day at our farm, and after family pictures this morning, I’m still trying to de thaw. Fall has made its arrival, and according to my frozen fingers, winter isn’t too far behind.
Which means it’s chili season! I love chili because it’s easy, and doesn’t require a recipe. I don’t know if I’ve made a pot of chili the same twice. I just grab some things, throw ‘em in a pot and say a little prayer it tastes good. Add a little sour cream, and cheese and a dash of hot sauce, and it’s bound to be edible, right?
Here is my chili recipe from today:
1 lb sausage
1 can chili beans
1 cup sweet corn
1 small can sliced mushrooms
1 can tomato sauce
Spices: chili powder, onion powder, cumin, ground thyme, salt & pepper and my secret ingredient in all of my recipes —- a pinch of sugar.
I serve with cheese quesadillas, cut in 4 triangles, for dipping—Because I sometimes (most of the time) eat my food like a small child.
The best part is, It’ll still be warm when my cowboy walks in the door after shelling corn all day!
